Ramen Noodle Salad with Peanut Dressing

In a bowl, combine the ramen squares (crushed or whole, as desired), shredded carrots, shredded purple cabbage, cooked edamame, and chopped green onion. Mix these ingredients together and set the bowl aside.

For the dressing: In a separate bowl, combine the 1/3 cup creamy peanut butter, 1/2 cup coconut aminos, 1 tbsp sesame oil, 1/4 cup honey, 1 tbsp minced garlic (or 1 tsp garlic powder), 3 tbsp fresh lime juice, and 1/4 tsp salt. Whisk until well combined and smooth.

Pour the prepared peanut dressing over the mixed vegetables and ramen. Toss everything together until the salad is thoroughly coated. Garnish with slivered almonds or unsalted peanuts and some sesame seeds before serving. Enjoy!
